Mission:

Equitable access to safe and nutritious food is a basic societal need that impacts the health, livelihood and wellness of all humans. The ability to provide and sustain such access has become a major concern and a challenge for many countries around the world. The Food Supply Chain Analytics and Sensing (FSAS) Initiative is creating predictive analytical tools and technologies to improve the design and management of safe and reliable food supply chains that are accessible and sustainable.

HEALS Grant Progress Update

FSAS faculty members Retsef Levi and Karen Zheng, in collaboration with Professor Ariel Furst, were awarded an Innovator Grant though the MIT HEALS Seed Grant Program for the project "Leveraging AI, Supply Chain Analytics, Empirical Methods, and Low-Cost Sensing of Food Contact Chemicals to Enhance Assessment and Mitigation of Health Risks Emerging from Processed Foods".  This project combines FSAS's work on developing a searchable database of packaged food ingredient information with Prof. Furst's expertise in developing low-cost, easy-to-use contaminant sensors to develop a powerful set of tools to comprehensively evaluate the potential health risks associated with consuming packaged foods. Packaged Food Ingredient Database: Preliminary Findings

The U.S. FDA and the U.S. Department of Health and Human Services recently announced the elimination of six petroleum-based synthetic dyes from the nation’s food supply chain by the end of 2026. How prevalent are these colorants currently in the American diet? Our recent report seeks to estimate the number and proportion of foods sold in the U.S. containing these 6 color additives.
